Method

The chef moveBloom the cumin and garlic in oil before the lentils go in — it's the difference between lentils that taste like a pantry and lentils that taste like a dish.
  1. Warm oil, bloom cumin and minced garlic 30-45 sec until fragrant.
  2. Add lentils and broth, bring to a simmer. Cook uncovered 15-18 min, stirring occasionally, until the lentils break down and thicken.
  3. Off the heat, stir in lemon juice and salt to taste.

Why do red lentils fall apart while other lentils hold their shape?

Red lentils are split and hulled, which strips away the tough outer seed coat that keeps green or brown lentils intact. Without that coat, the starchy interior absorbs water fast and breaks down into a soft, thickened mass rather than staying as distinct little discs.

Why bloom the cumin in oil before adding the liquid?

Most of cumin's flavor compounds are fat-soluble, not water-soluble. A minute in hot oil dissolves them into the fat, which then carries that flavor through the whole pot — cumin added straight to simmering broth stays mostly locked up and tastes dusty by comparison.
