Why salt eggs and let them sit before scrambling?
Salt takes a few minutes to break down some of the protein bonds in raw egg — the same effect that makes salt useful in a meat brine. Salted early and rested 10–15 minutes, the eggs scramble into looser, more tender curds because the proteins don't seize as tightly when they hit the heat. Salt them the instant before cooking, or after, and you skip that window — still fine eggs, just tighter and quicker to go rubbery if you look away for a second too long.
Why rest meat before cutting into it?
Heat contracts muscle fibers and pushes moisture toward the center as it cooks. Cut immediately and that mobilized juice floods out onto the board instead of staying in the meat. A rest — roughly 5 minutes for a steak, longer for a roast — lets the fibers relax and reabsorb some of that moisture, and the center keeps climbing a few more degrees from residual heat (carryover cooking) even after it's off the heat. A rested cut is both juicier and more evenly cooked than one sliced straight off the pan.
Why cook ground spices in oil before adding liquid?
Most of the flavor and aroma compounds in dried spices are fat-soluble, not water-soluble. A minute or two in hot oil dissolves those compounds into the fat, which then carries them through the whole dish. Spices dumped straight into a watery braise stay mostly locked inside their own particles and taste flat and dusty by comparison — blooming is what turns "spiced" into "seasoned."
How do you know when shrimp is actually done?
Watch the shape and color, not a timer. Raw shrimp are translucent gray; cooked shrimp turn opaque and curl into a loose C. If they tighten into a tight O, the proteins have overcooked and squeezed out moisture — that's the point of no return. Shrimp go from raw to overcooked in under a minute at high heat, so pull them the moment they curl into that loose C, not before and not much after.
What's actually happening when you brown butter?
Butter is fat plus water plus milk solids — proteins and sugars suspended in it. Melted gently, the water boils off first (that's the foaming stage), and once it's gone, the milk solids are finally exposed to the pan's full heat and brown through the Maillard reaction, the same chemistry that browns bread crust and seared meat. The nutty smell is literally toasted milk protein. It goes from browned to burnt in seconds once the solids catch, so pull it the moment it smells nutty and looks golden-brown, not before and not much after.
Why do stir-fries call for such high heat?
A stir-fry lives or dies on searing, not simmering — high heat browns the surface of meat and vegetables fast, before they've had time to release much water. A pan that's not hot enough, or one that's overcrowded (which drops the temperature the same way), lets that released water pool at the bottom, and everything ends up simmering in it instead of browning. That's the entire difference between a stir-fry with real charred edges and one that tastes boiled.

What's the ratio for a pan sauce, or any vinaigrette-style sauce?
Start at roughly 3 parts fat to 1 part acid by volume — that's the classic vinaigrette ratio, and it's also what a mounted pan sauce is aiming for once it's finished. Build it in order: deglaze the pan with your acid (wine, vinegar, stock) to dissolve the browned fond stuck to the bottom, reduce it until syrupy, then pull the pan off the heat and whisk in cold butter a piece at a time. Off the heat matters — it lets the butterfat emulsify into tiny droplets suspended in the liquid instead of just melting and separating into a greasy puddle. Taste as you go: a sauce that's too sharp needs more fat, one that's flat and heavy needs more acid.
How much should you salt pasta water — and does it matter?
It matters — pasta absorbs some of that water as it cooks, so salting only at the table seasons the surface while the inside stays bland. The standard professional-kitchen benchmark is water that tastes like the sea: roughly 1–2 tablespoons of kosher salt per gallon (about 10g of salt per liter). Salt it before the pasta goes in, not after, so there's time for it to dissolve evenly through the pot.

What temperature is chicken actually safe at?
165°F / 74°C is the instant-safe number the USDA gives — salmonella is killed effectively immediately at that temperature. But safety is really about time at temperature, not one instant: holding meat at a lower temperature for longer gets you there too, which is why sous-vide chicken cooked lower and held for a longer stretch is just as safe even though a thermometer never reads 165°F. For a normal weeknight pan or oven, though, 165°F / 74°C on an instant-read thermometer is the number to pull at — no guessing required.
