Method

The chef moveGet the pan truly smoking and don't move the broccolini. Char is flavor; fear of char is why side veg is boring.
  1. Heat a dry pan until smoking, add oil then broccolini in one layer. Leave it to char 3 min.
  2. Toss with sliced garlic and chili flakes off the heat; salt.

Why leave it alone to char instead of stirring?

Browning (the Maillard reaction) only happens above about 150C, and a wet, constantly-stirred pan never gets there — it just steams to army green. Leaving the broccolini in contact with the screaming pan lets it hit char temperature and build the nutty, slightly bitter flavor that makes plain vegetables taste cooked-on-purpose.
